Instant Pot Collard Greens
This is hands down one of my absolute favorite meals.
Collard greens are in season ya’ll and they’re packed full of beneficial vitamins and minerals. They’re a member of the cabbage family, believe it or not, so they’re in that cruciferous vegetable category. Any dark leafy green’s pigment is a signal they pack a powerful punch in antioxidants.
We typically serve them with boiled plantains to add some healthy whole food carbohydrates. If you aren’t a fan of ham, pork or pig (all the same things, haha), my mother in law sometimes makes them with smoked turkey and it’s equally delicious.
With this Instant Pot recipe you can enjoy them without having to wait for them all day.
ingredients:
4 bundles of organic collard greens
1 lb of smoked pasture raised ham hock (bone and meat)
1 medium onion, diced
1 bell pepper, diced
6 cloves of garlic, minced
2 bay leaves
2 tablespoons of apple cider vinegar
6 cups of water
2 teaspoons cumin
2 teaspoons smoked paprika
1 teaspoon garlic powder
1 tablespoon of good quality salt, this will depend on how smoked and salty your ham hock is.
2 teaspoons of pepper
instructions:
Step 1: Build your broth. Add your ham hock, diced onion, minced garlic, water, apple cider vinegar, salt and pepper to the Instant Pot.
Step 2: Set your Instant Pot to manual high heat for 20 minutes.
Step 3: While your broth is cooking, prepare your collard greens by removing the large part of the stem and cutting collards in 1.5 inch squares. And dice your bell peppers.
Step 4: When 20 minutes is done, release pressure manually (by flipping the release nozzle on the top of your Instant Pot).
Step 5: When broth is done & pressure is released, add collard greens, diced bell peppers, bay leaves and remaining spices (cumin, smoked paprika and garlic powder). *You’ll have to gently push your collards down to be submerged in broth.
Step 6: Set manual high heat to 25 minutes. When 25 minutes is done, release the pressure manually.
Step 7: Remove ham hock and shred meat off bone, add back into your collards.
Step 8: Give it all a stir, add more salt & pepper to taste and enjoy!
