Roasted Butternut Squash & Brussel SProuts
This recipe brings all the feels of fall, Thanksgiving, and memories with friends and family in Texas. I once made my sister in law a huge batch of this recipe AFTER Thanksgiving so she could take it home (in another state).
Holidays are bittersweet now that we live abroad, but instead of hanging on to old traditions that don’t make sense here, we are making new ones. I mean I can’t find a brussel sprout to save my life here in Costa Rica.
It’s easy to get stuck in memories that fill your heart, but just like having more than one baby…your heart has the capacity to love more than you ever knew. I’m excited to make new memories, to stay present in what is and always embrace change.
Ingredients:
1 lb butternut squash, peeled and cubed into 1/2 inch cubes
1 lb Brussel sprouts, stems trimmed and cut into quarters
2 tablespoons avocado oil
1 teaspoon of salt
1/2 cup of dried cranberries, unsweetened/naturally sweetened
Dijon dressing Ingredients:
1 tablespoon dijon mustard
2 teaspoon apple cider vinegar
2 tablespoons avocado oil or extra virgin olive oil
A sprinkle of salt, to taste
Freshly ground black pepper, to taste
Instructions:
Step 1: Preheat your oven to 450 degrees.
Step 2: Place your butternut squash and Brussel sprouts on a large bake sheet and add your 2 tablespoons of avocado oil. Toss to incorporate evenly. Season with salt.
Step 3: Roast your butternut squash and Brussel sprouts for 30 minutes (depending on how crispy you want them), making sure to stir and mix them 1 to 2 times for even roasting.
Step 4: When the butternut squash and Brussel sprouts are done take them out of the oven and sprinkle with dried cranberries. Set aside to let cool while you mix up your dijon dressing.
Step 5: In a small bowl whisk together your dijon mustard and apple cider vinegar. Slowly pour in your avocado or extra virgin olive oil, mixing continuously until all ingredients are incorporated. Season with salt and pepper to taste.
Step 6: Add your roasted vegetables and dried cranberries to a large serving bowl and pour your dijon dressing over it. Toss all your ingredients together gently until everything is lightly coated in the dressing.
Step 7: Enjoy and happy feasting.
