Tropical Mango Salsa

This mango salsa has been my secret weapon for many taco nights. It takes an ordinary taco and makes it extraordinary. All fresh ingredients…great with chips, on your favorite burrito bowl, and a great addition to salads!

A acquaintance/follower recently reached out to me and shared that their family made my recipe for tostones/patacones, refried beans and guacamole… a full meal! This made my day! While I wish I had a lot of easy one pot meals to share with you, a lot fo times our meals are a protein, tons of veggies, with some stand out salsas and sides!

Mangoes are plentiful here in Costa Rica and I love a good salsa. Add some hot peppers of your choice if you like it SPICY!

Ingredients:

  • 1 whole mango, sliced in small cubes

  • 2 hass avocados, sliced in small cubes

  • 1/2 of a large red onions, finely chopped

  • 3 cloves of garlic, finely chopped

  • 1/4 cup of fresh cilantro, finely chopped

  • Juice of 1-1.5 lime *depends on how much juice your citrus yields

  • Salt to taste, start with 1/2 teaspoon and go from there

Instructions:

Step 1: Finely chop the red onion and garlic and add it to a large bowl. Juice the lime over the onion and garlic and let it soak while you prepare your other ingredients. *This takes some of the heavy punch out of these ingredients

Step 2: Add your small cues of mango and avocado to the red onion, garlic and lime.

Step 3: Finely chop your cilantro and add to the other ingredients. Stir to evenly incorporate all ingredients.

Step 4: Salt to taste and enjoy!

Add your pepper of choice if you like it SPICY.
